Marilyn’s Creamy Red Pepper Sauce for Pasta
Many of you have commented that we have a dream job here at Fratelli
Perata. Not only do we get to choose any wine to pair with whatever
we’re eating, but we meet the nicest people, too. Here is an excellent
sauce from Marilyn’s kitchen. It quickly adapted itself to our kitchen.
The colors are very pleasing, as is the taste. The only caveat I will
offer is to drink this with red wine, Petite Sirah works nicely.
2 T olive oil
1 medium onion, chopped
3 cloves garlic, minced
1 -12 ounce jar roasted red peppers, drained, pureed
1 cup heavy cream
1 1/2 tsp salt
1/2 tsp cumin (use a light hand here. If you have any leftovers (!) the flavor intensifies dramatically
1/4 tsp cayenne
1 cup frozen peas, thawed
1 cup grape tomatoes
1/2 cup cilantro, chopped
Sautee onion and garlic. Add peppers, cream, salt, cumin and cayenne.
Once thoroughly heated, add peas, tomatoes and cilantro. Pour over
cooked pasta. We used gnocchi which was a wonderful combination. Could
also add grilled chicken to this. Just a really nice, easy sauce.
Hardest thing about it is to stop eating.
