4 pints fresh, wonderful strawberries
1 bottle Fratelli Perata Sangiovese
Sugar to taste, approximately 1/2 to 3/4 cup
Dark chocolate to drizzle, your choice from
Hershey's syrup
to Trader Joe's to Lindt
Open a bottle of Sangiovese, pour into a large saucepan, and bring to a rolling boil, then reduce to slow boil. Reduce wine by 1/2 volume. Reduce heat to simmer. While the wine heats, clean, hull, and slice strawberries in half lengthwise.
Taste the strawberries. If tart, add up to 3/4 cup sugar to warmed Sangiovese, stirring well to dissolve. If incredibly sweet, adjust amount of sugar downward, to taste.
Gently place the strawberries into the pan of sweetened wine, simmer approximately 10 minutes. At this point, you can turn off the heat, cover, and put in the refrigerator to be used later. Or, drain the strawberries (I reserve the wine!) and place cut side down on a serving platter. Drizzle with Hershey's syrup or melted tempered dark chocolate. Serve with toothpicks and Fratelli Perata Sangiovese. Can also be put over angel food cake or cheesecake.
